Cimarossa Vineyards, located on Howell Mountain at elevations between 1,600 and 2,100 feet, is a secluded estate owned by Dr. Dino Dina, who has Italian heritage reflected in the vineyard's name, meaning "red hilltop." The vineyard spans 60 acres, with 15 acres planted primarily with Cabernet Sauvignon, alongside small blocks of Nebbiolo and Malvasia. The unique volcanic soil and diverse geological features contribute to the concentrated flavors of the grapes. Established in 1997, Cimarossa's first vintage was in 2003, initially produced at nearby O'Shaughnessy Winery. Since 2009, Mia Klein has served as the winemaker, focusing on robust wines that express the vineyard's terroir. The winery experienced challenges during the 2020 Glass Fire but managed to preserve most of the vineyard and its structures. Cimarossa offers private, appointment-only visits for members, featuring unscripted vineyard tours. The wines are primarily sold through an allocation membership, with limited availability at select local shops. The estate also produces olive oil from Tuscan varieties, available for purchase alongside their wines.
