Hibou Wine, founded in 2014 by Jason and Hilary Driscoll, is located in Napa Valley. The winery's name, meaning "owl" in French, reflects Jason's inspiration from the golden owls of Dijon during a trip to Burgundy. Jason's journey to winemaking began after a corporate job with Campbell Soup, leading him to work at Elsom Cellars in Washington and later at HUNNICUTT Winery in Napa, where he gained valuable experience. Hibou produces a range of wines, including unique varietals like Assyrtiko, sourced from a small vineyard in Lodi, and Sauvignon Blanc from the Burkett Vineyard near St. Helena. Their Chardonnay is a blend from the Star Vineyard and Carneros, while the Cabernet Sauvignon primarily comes from the Star Vineyard in Rutherford. The wines are characterized by their rich flavors and textures, with a focus on quality and craftsmanship. In mid-2023, Hibou opened a tasting salon in downtown Napa, designed with a speakeasy aesthetic, offering a direct-to-consumer experience.
