Phifer Pavitt Winery, located near Calistoga, California, is owned by Suzanne and Shane Pavitt, who purchased their 23-acre hillside property in 1998. Their first vintage was produced in 2005, with their flagship wine being a premium Cabernet Sauvignon called "Date Night," inspired by the couple's weekly date nights. The winery sources grapes from Temple Family Vineyards and practices organic farming, preserving ancient oak trees within the vineyard. The winery experienced significant damage from the 2020 Glass Fire, which destroyed most of their vineyards but spared the winery building. They replanted their vineyard in 2021. Phifer Pavitt produces a variety of wines, including a sparkling wine and Sauvignon Blanc, which is crafted in a style reminiscent of Sancerre. The tasting room, housed in a repurposed building from 1907, offers a rustic ambiance with creative decor made from reclaimed materials. Ted Osborne serves as the winemaker, bringing extensive international experience to the winery. Phifer Pavitt also announced a partnership to create bourbon in 2018. The winery provides a unique tasting experience, often accompanied by the sounds of local wildlife.
